I receive disability insurance through my workplace and they are suggesting I apply for early CPP. Can they force me to apply?

They can’t force you to apply for CPP but if you are referring to CPP Disability then an insurer (especially an LTD insurer) can ask you to apply for it. If you don’t apply for it they could estimate what you should be receiving from CPPD and reduce your monthly payment amounts accordingly.
