What are my rights and responsibilities when on LTD for over two years? For example, if I were to receive an inheritance, must it be reported to my insurer?

Typically, your rights/responsibilities would remain the same as when you initially started LTD. You must continue to receive treatment, follow medical advice, and meet your insurers definition of total disability.
Typically, inheritance isn't considered income and thus the insurer wouldn't get a claim for it, however each policy is different, so you should review your policy to confirm.
