If you sign for an early retirement package and then got hurt now on long term disability, what happens to that package

I need more information in order to be able to answer, but generally speaking if you are getting a retirement package so long as there aren't any strings attached to it, such as a claw back of some sort if you earn subsequent income, there shouldn't be an effect on that retirement package.
